This is hands down the easiest thing I’ve ever made in my life and it is ridiculously good. Great last-minute dinner. All you need are the ingredients and about 15-20 minutes. I thought I’d post this recipe today because Winter doesn’t seem to be going away. Enjoy!
8 cups chicken broth
1 medium onion, peeled
Chives (for garnish)
1 can Pillsbury buttermilk biscuits
To prepare, shred the chicken into bite-size portions. Pour the broth into a large pot. Add the chicken, onion (whole), and herbs (tie the herbs tightly with the twine so there are fewer bits and pieces floating around). Simmer on medium-high heat until it starts to boil. * You can add frozen peas and carrots if you feel like it. Cut each biscuit into sixths, and drop the pieces into the pot. It’s done when the pieces are poofy.
Remove the onions and herbs. Add salt and pepper to taste. Garnish with chives, if you please.
