This is one of my kids’ favorite muffin recipes. It’s a delicious combination of flavors and the orange juice gives it zip. I like to bake on the weekends, when I have time. They are a great grab and go item during the busy school week.
2 ¼ cups unbleached all-purpose flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
¼ cup vegetable oil
1 cup orange juice
Pure vanilla extract to taste – I add few splashes. It’s different every time.
2 banana’s, mashed
½ cup nuts, finely chopped (optional). I like to use walnuts.
Preheat – 400 degrees. Lightly butter twelve muffin cups. (I spray with light olive oil instead)
In a large bowl, combine flour, sugar, baking powder, and baking soda. Stir until dry ingredients are mixed.
Stir in oil, orange juice, mashed bananas, vanilla, and nuts (*if used) until smooth. *I usually leave out nuts for first half of batch. After I’ve spooned out six helpings (muffins), I’ll add nuts to remaining mix. Stir and spoon last six.
Bake for 20 to 25 minutes or until browned on top.
Remove and cool in pan on wire rack.
